Ingredients you'll need...

1 tbsp white chia seeds
1 cup soft apricots
1 cup rolled oats
2 tbsp honey
1 cup desiccated coconut, extra coconut for coating

How to make Apricot Bliss Balls... 
  1. Mix chia seeds with 1/4 cup water and let it sit for 10 minutes until thick.
  2. Process chia mixture, apricots, oats, honey, and coconut in a food processor until well combined.
  3. Create balls from the mixture
  4. Then roll them in extra coconut to coat.
  5. Repeat for the remaining mixture.
  6. Chill in the refrigerator for 20-30 minutes until firm.

Feeding kids is like playing darts blindfolded...you never know what's going to hit!
